1 cup - all purpose flour
2 tbsp - brown sugar
2 tsp - baking powder
1/2 tsp - salt
1/2 tsp - cinnamon
2 - eggs, separated
3/4 cup + 2 tbsp - milk
1 tsp - vanilla
1/2 cup - apples, peeled and shredded

Combine flour, sugar, baking powder, salt and cinnamon. In another bowl, beat together egg yolks, milk and vanilla. Stir into dry ingredients. Stir in apples. Beat egg white until stiff peaks form; fold into batter. Pour batter by 1/4 cup onto greased griddle. Turn when bubbles begin to form and edges are golden.
Yields: 12 pancakes.
