1 1/2 c. all-purpose flour
3 tsp. baking powder
1/4 tsp. salt
2 eggs
1 c. milk
2 Tbsp. butter, melted
1/2 c. crumbled feta cheese
3 Tbsp. snipped chives

In a bowl, combine flour, baking powder, and salt. In another bowl, whisk the eggs, milk, and butter; stir into dry ingredients just until moistened. Fold in the feta cheese and chives. Fill greased or paper-lines muffin cups 2/3 full. Bake at 400° for 18-22 minutes. Cool for 5 minutes before removing from pan to wire rack. Serve warm. Refrigerate leftovers.

Yield: 1 dozen.
