Lemon Poppy Seed Muffins recipe from Mountain View Country Market in Chuckey,TNLemon Poppy Seed Muffins

1 box lemon cake mix
1 pkg. instant lemon pudding
4 eggs
1/2 c. oil
1/4 c. poppy seeds
1 c. water
lemon juice
powdered sugar

Mix all ingredients together. Fill muffin tins 2/3 full. Bake at 350° for 20 minutes. When done baking, punch holes into the top of each muffin. Make glaze of lemon juice and powdered sugar. Pour over muffins while still hot. I like to add glaze a second time after the muffins are cooled. Makes 30 muffins.
