Loaded Potatoes recipe from Mountain View Country Market in Chuckey,TNLoaded Potatoes

8 med. potatoes
4 Tbsp. butter, melted
1 tsp. minced garlic
salt & pepper, to taste
1 lb. bacon, fried & crumbled
sliced colby or cheddar cheese
2 c. sour cream
green onions, opt.

Preheat oven to 400°. Slice potatoes thinly (about 1/8") without cutting all the way through bottom. Place potatoes on a prepared baking sheet. Pour melted butter over potatoes. Season potatoes with minced garlic, salt and pepper. Cover and bake at 350° until potatoes are tender, about 1 1/2 hours. Remove potatoes from oven and stuff a little cheese slices in-between a few of the slits. Sprinkle on bacon; return potatoes to oven until cheese has melted, about 5 minutes. Top with sour cream and green onions. Dig in!
