Potato Pan Rolls recipe from Mountain View Country Market in Chuckey,TNPotato Pan Rolls

2 Tbsp. yeast
1 tsp. sugar
1 cup warm water
1 cup mashed potatoes
1/2 cup melted butter
1/4 cup vegetable oil
1/2 cup honey
2 eggs
2 tsp. salt
6-7 cups flour

Dissolve yeast and sugar in warm water. Add rest of ingredients. Knead until smooth and elastic. Let rise till doubled in size. Shape into rolls and place in a greased 9x13" pan or round cake pans. Let rise for approx. 30 minutes. Bake at 375° for 20-25 minutes or until golden brown.
