Sweet Potato Pie
1 (9") pie shell, unbaked
2 eggs
2 c. mashed sweet potatoes
3/4 c. sugar
1/2 tsp. salt
1 1/2 tsp. pumpkin pie spice
1 (12 oz.) can evaporated milk
Heat oven to 425°. Beat eggs slightly; beat in remaining ingredients.
Pour into pie shell. Bake 15 minutes. Reduce oven temperature to
350° and bake 45 minutes longer. (Center should rise slightly.) Cool.
Serve with whipped topping.
